We had a few different batches of deviled eggs made by friends leading up to Easter, but none as good as mine, so @LeftyOhh requested I make some... But he also challenged me to create these Jalapeño Popper Deviled Eggs. I didn't use a recipe for the yolk filling (per usual, I just tweak the amounts of my preferred ingredients until it tastes right 🤷🏼) Personally I think cooking works better when you just experiment! So while I don't have measurements to share, I will tell you how I made these: Boil eggs for 2 minutes, then cover off the heat for 8 minutes. I prefer to drain all the water and switch to an ice bath to aid in easier peeling (also, don't use fresh eggs if you can help it) Once you have them peeled and halved, combine the yolks with mayo, yellow mustard, honey mustard, pickle juice (I like a bit of both sweet AND dill), a dash of Worcestershire sauce, and salt and pepper. Other variations include a smidge of hot sauce or horseradish for extra devil! While my eggs were doing their thing, I fried up a few slices of bacon for the Poppers. I then sauteed some chopped jalapeño (no seeds or ribs) in the bacon grease. Once the eggs were ready, I dredged the empty egg white halves in flour, then cream, then garlic seasoned bread crumbs, and flash fried them in oil - seriously, once my oil was up to medium temp they took less than 30 seconds to cook. While they were still hot, I sprinkled them with cheddar cheese, bacon, and jalapeños, filled with yolk mixture, and then topped with more cheese, bacon, and jalapeños. For doing this completely without a recipe, we were both SUPER impressed with how awesome these turned out!
